Lunch:  Hominy Casserole

Dinner: Danish Squash Stuffed with Corn & Lime Rice, Spicy Teriyaki Chickpeas

Snack: Stir-fried cauliflower and carrots

Beverages: Water & Unsweetened Herb Tea

 

Tuesday

Breakfast: Steel-cut oats with blueberries and brown sugar

Lunch:  Hominy Casserole

Dinner:  Spaghetti squash with baked beans, broccoli

Snack: Stir-fried cauliflower and carrots

Beverages: Water & Unsweetened Herb Tea

 

Wednesday

Breakfast: Steel-cut oats with blueberries and brown sugar

Lunch: Orange Couscous, Bean Burgers w/Salsa, Green peas

Dinner: Orange Couscous, Bean Burgers w/Salsa, Green peas

Snack: Stir-fried cauliflower and carrots

Beverages: Water & Unsweetened Herb Tea

 

Thursday

Breakfast: Steel-cut oats with blueberries and brown sugar

Lunch: Mashed sweet potatoes, Bean Burgers w/ Salsa, Canned Corn

Dinner: Oven Fries with ketchup, Bean Burgers w/ Salsa, hominy

Snack: Stir-fried cauliflower and carrots

Beverages: Water & Unsweetened Herb Tea

 

Friday

Breakfast: Steel-cut oats with blueberries and brown sugar

Lunch:  Spanish rice, green beans

Dinner:  Stuffed Peppers

Snack: Sweet and Sour Red Cabbage

Beverages: Water & Unsweetened Herb Tea

 

Saturday

Breakfast: Steel-cut oats with blueberries and brown sugar

Lunch: Spanish rice, green beans

Dinner:  Baked Potato topped with creamed corn, green smoothie

Snack: Sweet and Sour Red Cabbage

Beverages: Water & Unsweetened Herb Tea

 

 

Sunday

Dinner:  Hash Browns topped with sloppy lentils

Grocery List

 

3 onions

6 lbs carrots

2 sweet potatoes

2 Baking Potatoes

2 red & 3 green bell pepper

1 head cauliflower

1 small red/purple cabbage

6 cremini mushrooms

1 Delicata squash
1 spaghetti squash

Piece of ginger root

1 bunch celery

2 limes

1 Orange

Bananas

 

1 can mexi-corn

3 15oz can crushed tomatoes

2 small can diced green chilies

4 cans hominy

2 small cans pineapple chunks

1 Bush’s veg baked beans

1 lb Hulled barley

1 lb dry great northern beans

2 lbs couscous

 

Vegan Worcester sauce

Teriyaki sauce

Szechuan sauce  

Salsa

Pumpkin pie spice

Caraway seeds

Cocoa powder

 

Notes:  This is my actual grocery list for the week and only reflects what I need to prepare the menu items.  I already have many of the needed ingredients like frozen corn, lentils and brown rice.
