Lunch: Pinto bean soup over brown jasmine rice
Dinner: SOS (peas/carrots/broccoli/mushrooms in white sauce over mashed potatoes)
Tuesday:
Breakfast: Steel Cut Oats with Blueberries and a spoonful of brown sugar
Lunch: Pinto bean soup over brown jasmine rice
Dinner: Oven Fries with ketchup, hominy, green smoothie
Wednesday:
Breakfast: Steel Cut Oats with Blueberries and a spoonful of brown sugar
Lunch: Pinto bean soup over brown jasmine rice
Dinner: Baked Potato topped with creamed corn, broccoli
Thursday:
Breakfast: Steel Cut Oats with Blueberries and a spoonful of brown sugar
Lunch: Curried lentil and potato soup over brown jasmine rice.
Dinner: SOS (peas/carrots/broccoli/mushrooms in white sauce over mashed potatoes)
Friday:
Breakfast: Steel Cut Oats with Blueberries and a spoonful of brown sugar
Lunch: Curried lentil and potato soup over brown jasmine rice.

1 head garlic
4 baking potatoes
20 pounds white/red/yellow potatoes
3 Yams/Sweet potatoes
4 large Broccoli heads
2 pounds baby spinach
1 pound cremini mushrooms
1 bunch bananas
Frozen peas & carrots
Frozen fat free hash browns
Frozen mango
2 Rice milk
3 Gravy mix
Corn starch
3 lbs Brown Jasmine Rice
3 lbs Steel Cut Oats
3 Cans hominy
3 Cans creamed corn
2 Cans diced tomatoes
Notes: this is my actual grocery list for the week and only reflects what I need to prepare the menu items. I already have many of the needed ingredients like red lentils and pinto beans.

I love the steel cut oats so much better than rolled oats. They have a chewy flavor and that seems more satisfying to me.

Hi Barbara,
I’m in love with steel cut oats this week, but I’m fickle. I understand steel cut oats are a little healthier since the rolled ones are steamed and therefore lose some vitamins. The only down side of the steel cut is that they take longer to cook.

Hi Letha! I love all the food pictures on your blog.
I deal with the problem of steel cut oats taking longer to cook by making a huge pot on the weekend and then reheating them in the microwave throughout the week.

Hi Toadfood. That’s a good idea. I’ve not tried reheating steel cut oats before. It sure would save time.
