Jubilee Stir Fry on Red Plate

Diced green bell pepper, frozen peas, grated carrot, sliced green onions

Jubilee Stir Fry
1 Tablespoon Soy Sauce
1 Tablespoon Seasoned Rice Vinegar
1 Tablespoon Maple Syrup

½ med green bell pepper, diced
½ cup frozen peas
1 bunch green onions, sliced
1 medium carrot, grated
1/2 cup water as needed to stir fry veggies

2 cups cooked rice (I used Lundberg Jubilee Rice Blend)

Mix soy sauce, vinegar, & maple syrup. Set Aside. Saute veggies in small amount of water until done to your liking. Stir in soy sauce mixture. Stir in Rice. Makes two servings.

Stir Fried Mushrooms, Broccoli and Wild Rice

1 Tablespoon Soy Sauce

1 head of broccoli
6 large crimini mushrooms
1/2 cup water as needed to stir fry veggies

2 cups cooked rice (I used Lundberg Countrywild)

Mix soy sauce, vinegar, & maple syrup. Set Aside. Saute veggies in small amount of water until done to your liking. Stir in soy sauce mixture. Stir in Rice. Makes two servings.

Notes: I usually like to cook mushrooms separate from other veggies. I don’t care for raw mushrooms. I like them thoroughly sweated and slightly browned. But you can stir fry the broccoli and mushrooms at the same time if you’re not so particular.
