Pinto Bean Soup

 

Ingredients:

1 cup dry pinto beans

½ medium onion, chopped

3 cups water

½ teaspoon salt

½ teaspoon cumin

¼ teaspoon cinnamon

1 can diced tomatoes

½ cup frozen corn

 

Directions:  Sort, rinse, soak beans overnight.  Drain beans.  Simmer beans and onion in water for 90 minutes.  Partially mash beans.  Add salt, cumin, cinnamon, tomatoes, and corn.  Simmer 20 minutes.  Serves 4
